I've converted movies using ffmpegX so that they were a lot smaller than 4GB.
So, it occurs to me, I ought to be able to put two or more movies onto one physical disk (as in, one single-layer disk, playable in my DVD player, which contained two movies).
How could I do that?

I personally would author the disc in DVDSP with a small menu to choose between the two movies.
It could also be done using Sizzle.
One question before any specifics are given. What format are these videos? If you converted them to avi remember that once they are converted back to mpeg-2 they will no longer be that 700mb file you just converted.
