I have a DVD player with the 5.1 analong output (6 RCA jack outputs labelled: front left, front right, center, left surround, right surround, subwoofer)
In the SPEAKER Menu I have only DOWNMIX with 3 options:
LT/RT * Stereo * VSS
The question is: if i connect a home theatre I should hear the sound correctly ?
How I setup this menu ?

I've never seen a dvd player with outputs for each channel. If your surround system allows seperate inputs for each channel, then it should work fine. Most surround systems, use digital input and decode the channels themselves.
Without know brands and model numbers, it is hard to give a better answer.Google is your Friend -
The dvd player you have already has a decoder built in which makes it an older model,If you avr has a 6 channel input then by all means use it and it does not then use the either optical or coaxial digital input on your avr to get 5.1 surround, and if you avr isn't then just use the left and right mixed audio on the back of the dvd player. Like louthewiz said, use the optical or coaxial audio out if it has it and you have that input on the amplifier. If not, then the player should have just right and left audio out that you can use, but then you would not get the surround sound effects.

I've seen receivers and speaker systems with the seperate inputs, I've just never seen any dvd that uses seperate outputs.Google is your Friend
