Is it possible to convert .MOV files to .AVI/.MPG/.MPEG with maintaining frame size, quality, sound, ETC and everything else?

Possibly. There are a lot of variables to this, and your is very vague and light on for detail. All encoding between compressed formats (unless a lossless compression algorythm is used) entails some loss. How much and whether or not is will be noticed depends on many factors. Without knowing more about your source and target formats, I can't be any more precise in my reply.
