You won't be able to record in HD but you can record DVD's in 16x9 format in Standard definition.
If you have a Firewire port on both the HDTV settop box and your DVD recorder you can try using that. It may or may not work.
An S-Video cable and Stereo audio cables will be your next best setup. These recordings will look great just not HD great. This is what I do.
Composite will give less quality still.

This still remains an unanswered question: what shall I do with a HDTV DVD recorder, when I can't use anything to output HDTV digital. Is there any use for an HDTV DVD recorder?

"The Hollywood plan" if they get their way is to keep premium HDTV content in a tightly controlled set-top box DVR environment with only 480i out. -
As far as I'm aware, no company currently makes or sells a true HDTV DVD recorder. The only official recording device for HDTV is an obsolete DVHS VCR. Computers, or course, can be used for recording HDTV material in true HDTV but the user knowledge required for doing this recording is high.
However, I always wonder, as these HD-PVR (I have the Motorola 62xx) have a standard hard drive which records all material, can one not simply remove this HD and copy the data off of it into a computer? --- unless of course it is encrypted). -

HDMI/DVI Digital I/O on those boxes is controlled by HDCP. The only window is the IEEE-1394 port. -

Like edDV suggested, set your set top box (STB) to out put 480i and connect to your DVD recorder. It should work.
