About YUV and RGB

I'm confused now, this is my version of the YUV and RGB story.

Television uses YUV
Computer uses RGB

My digital camera uses YUV?
My digital capture card/codec converts YUV to RGB? (EZDV with Canopus DV codec)
---
My VCR uses YUV?
My analog capture card/codec captures in YUV (miro DC30+ with MJPEG codec) and I can use MJPEG Decompressor to convert to RGB?

And now why I want to know all this:
I'm busy with two projects, editing movies (as you can see in an other topic), and converting VHS2DVD.
Editing: I capture the movie using Adobe Premiere, I also edit the movie in this program, when I'm done editing the movie, I export the movie with MPEG Encoder suplied with Adobe Premiere, after that I author and burn the DVD. On the DVD-player everything looks great, just like the exported movie on the computer.
Converting: I capture the movie using Virtual Dub, from there on everything goes just like editing... But the colors don't look that nice from time to time, and I think it has something to do with YUV vs RGB, or at least with a shortage of the amount of colors. However, on the computer everything looks great.

Can somebody please explain why the videos from the digital camera look good on the computer and dvd-player, and the the videos from the VHS look only good on the computer?
Do I have to convert it back into YUV after editing?
