stereo headphone line out to line in on computer; record with cool edit 2000 or goldwave; save file as type needed

Another good recording tool is spin doctor in ezcd creator. Although I use nero for burning, I installed ezcd creator then disabled the directcd drivers, that way I could use spin doctor.

I take the audio out from cassette deck or any line-level audio out from the stereo and put it into line-in on your sound card. Then I use Sonic Foundry's Sound Forge to "record" audio. Edit it in that program and save as a .wav. You can also use whatever software came with your sound card. They usually always give you some way to record and edit audio files.
Only hardware needed for audio "capture" is a sound card, nothing special. Even motherboards with onboard audio will support this.
