Sure. What types of file are on the DVD, and what types of files do you want to end up with on your computer ?
    If in doubt, Google it.

Explore the DVD with Windows Explorer. What files do you have ?

If you want the output as AVI, we can do AVI. If you want VCD, we can do that too. WMV, no problem ... you gotta tell us which one you want though !!!

Without knowing what you have as source, and what you want to end up with, it is impossible to give you any help at all. We're good, but we're not mind-readers
    If in doubt, Google it.

OK, so the files you have are dvd-compliant/authored - now things are starting to make sense. I'm gathering you dropped your 3 AVIs into NVE and just let it do the rest, right ?

Anyway, there's a couple of ways to skin this cat. I don't know a lot about NVE, but IMO the easiest way would be follow one of the guides listed here. There's quite a number of ways to split into 3 files - ranging from using virtualdub on your final AVI file, to ripping by chapter, but it all depends on how NVE has created the DVD.
    If in doubt, Google it.
