Encoding mpeg2 from avi (capture from VHS Pal 352X576) the lightened objects seem to get burned. I mean that the asphalt, or the walls of a house, or the sky are unacceptably white, actually burned, under the sunlight.
The encoding method was usual , 2-pass, 4400 average bitrate (decent for VHS source), no filters.
Can you please tell me how this phenomenon can be eliminated?

I couldn't say how or why it happend, but you can fix it to your own preferences using a "clip lum" filter. Also, make sure to encode with CCIR601 and not YCbCr (although your source probably came in CCIR601 anyway coming from tv).
