How can I do that? I tried with dvd shrink but there are a lot of folders, noon of them with the complete file.Please notice that I don't want to burn the dvd but only create the possibility to see a DVD without the need to bring the original one

Use DVD Decrypter in Read ISO mode, then use Daemon Tools to mount the ISO as a virtual DVD drive. This way you can use any software DVD Player (not all DVD software can play ripped files).

The file that I obtained is an ISO .rar file and when I try to mount the ISO image, nothing happens.

I know but at the end of the process there are 2 folders ( audio and video) Which one shall I mount with Daemon??

That is not an iso. You can play it directly with PowerDVD or WinDVD or Media Player Classic, just choose to play a dvd from a hd and choose the VIDEO_TS folder or the video_ts.ifo.
If you want an iso from the two folders you can use imgtools classic.
