If it's just an MPEG2 stream (i.e. .m2v), then there's no audio to extract, it's just video. If it's a .VOB or .MPG, then you can demux it using something like Extractor, bbdemux or ffmpegX.
I like systems, their application excepted. (George Sand, translated from French), "J'aime beaucoup les systèmes, le cas d'application excepté."

Also, if you are just needing the audio, say from a Music DVD,
that you want to make your own take along CD for the Car,
use an audio capturing utility that will allow you to record and save natively to AIFF, such as any one of the products made
by Amoeba Software ( Wiretap, Audio HiJack, or Audio Hijack Pro.)

I used Audio Hijack Pro to capture to AIFF a concert DVD,
and was able to record the the audio as AIFF, make my seperate tracks, and then burn the AIFFs (roughly, 14 tracks) straight to CD through iTunes. With extracting the audio from an MPEG-2, you will still need to convert back to AIFF ( some MPEG-2s have AC3 audio) before
burning to CD. By natively capturing (recording) it directly to
AIFF, you save yourself a step.
