I've been using the ever popular method of mac the ripper, dvd2onex and toast 6 to make backups of my dvd collection. Up until now I have only wanted to burn the movie and have not worried about menus. But now I have a dvd with numerous episodes of a tv series (family guy). I was wondering if there was a reasonably simple way of creating a corresponding menu for the video_ts folder that i have created using dvd2one.

Hrmmm, just re-rip the disc with menus ('complete disc' or something similar in MTR), then run dvd2onex on that video_ts folder. dvd2onex will handle menus no problemo.

If you do a full disk extraction you can use the advanced tutorial on my website, under DVD to DVDr if there is stuff you want to remove but still retain the menu
but for your case it sounds like the full disk extract with disc copy mode in dvd2one will work wonders.
