Hi, I would like to make my own demo dvd using scenes from dvd's I have. I am not sure how to do this, I am familiar with IFO Edit, DVD Shrink etc. but do not know how you would take only a small section of a chapter out of VOB files. Can you do this and have DD 5.1 and DTS on the same disc ? Can menus still be made ? Any help would be great, Thanks

Yes you can.
I'm not going to type out a guide for you (I hate to type), do some searches. You should be able to do what you want using DVDShrink (to extract the chapters) and DVD-Lab Pro beta 2 to author the DVD, make menus and use multiple audio.
Good luck.Got my retirement plans all set. Looks like I only have to work another 5 years after I die........
