I've been reading through all the guides
and it's a little overwhelming
I would a suggestion for the software that'll do the best quality rip
if I just do the movie, one audio stream, no subs and no extras

Yeah...very good debate question.....I personally like Instant Copy. Click off the option to keep the menus (you don't want them). And then only keep the movie checked with the language and subtitiles you want. Get rid of everything else.....It takes the longest out of all these programs...but in my experience it gives the best results.
But get ready for the debate -
DVD shrink is good & free, but personally I like Clone dvd. I use shrink for the larger movies.
