I picked one of these up at a thrift store the other day:

I assume it has some kind of MPEG hardware decoder in it but what is that connector for and what do I connect to it??

That is a feature connector.
You would have another MPEG card like the REELMAGIC and it would connect there.
I don't think the Stealth card itself has a mpeg decoder on it.
