how can i burn selectabl subs on dvd-r?

There are several ways, but basically:
1. Generate assests/elementary streams: m2v (video) ac3 (audio) and subtitle stream
2. Load elementary streams in authoring program. And generate VIDEO_TS folder
The problem is that only a few authoring programs can mux subtitles: DVD Maestro, Scenarist, Reel DVD, Encore and IFOEdit. The first two cost ~$25k, the next two ~$550, and IFOEdit is free
IFOEdit only accepts subtitles in the SUP format. There are tools at http://www.doom9.org to convert subtitles, you might need more than one program (eg. SRT2SUP) to go this thou.
