I'm at work, on an iMac system. I'm just wondering, when I encode the production from Final Cut Pro into Mpeg-2 can I lower the bitrate w/o encountering problems in DVD Studio Pro? If so will this allow me to put more on the DVD.

Bitrates between 4.5 and 8 are usually acceptable. This is up to around 120 minutes per disc.

That is an acceptable bit rate, however:
you can make the bit rate anything you want without any interference from DVDSP.
The lower the bit rate, the smaller the file size.
The smaller the file size the more files you can use as assets in DVDSP.
There are no limitations in regards to file size:movie length, as you would encounter with the VCD format or the iDVD software.
I have managed to fit over 8 hours on a single DVD with AC-3 sound without a single problem to report.
