I did Part 1, Part 3, and the bonus disc on 1 DVD-R each, and Part 2 went on 2 DVD-Rs.

I fed the VOBs to DVD2AVI, opened the .d2v file with Avi Utilities, used a few filters, created a project file, then encoded with TMPGenc and few tweaks.

Looks great. The movies didn't have all that much action in it. With the right filter settings, good compression can be achieved with out too much detail loss.

The same can be achieved with avisynth and CCE. Play around with convolution3d and Msharpen or Msmooth filters.

Just don't use DVD2One on it

Use either tmpg or cce to reencode if you want best quality; otherwise, don't bother with one and just put it on two dvd-rs.
