I have a simple question: Can I just use Disc Copier ( of Easy CD Creator, for example ) to copy DVD to DVDR? Or can I just write the VIDEO_TS folder to disc to back up a DVD? Or do I have to create Image?

Take a look to the left under DVD Ripping. You can use DVD Decrypter to make/rip an image then burn that image if the DVD is single layer. For dual layer discs you have to either cut part of the disc (normally the extras) or re-encode.
