Has anyone else had problems trying to produce 352x288 movies using the mpeg-1 encoder in Toast ?
I grab a video clip at the limit of CDVideo resolution (352x288 for PAL), but Toast produces an mpeg that when I check it with Quicktime Pro is only 320x240.
I can't find any options within Toast to change the resolution, any ideas.

That's because the aspect ratio is 4x3.
For example, look at an SVCD made w/ffmpegX. An SVCD is 480x480 but if the aspect ratio is 4x3 then it will be read as 480x360. If the aspect ratio is 16x9 then it will be read as 480x270.
