do all standalone dvd players recognise & play any encoded resolutions?
or just the dvd standard for pal & ntsc

No, not a all standalone DVD player will recognize all possible encoded resolutions. For instance you could encode at 100 x 100 resolution. I doubt you would find many, if any standalone DVD players that would display it in a XVCD, XSVCD or XDVD format. You can probably find some that could play it just as a raw MPEG.
There are many that will recognize all or most "standard" video resolutions. The standards that I can think of (NTSC) VCD 352 x 240, CVD 352 x 480 (also called half DVD) SVCD 480 x 480, DVD 704 x 480.
Your best bet to find something with the most versatility, is to look through the DVD Players list on the left and find a player that supports all the standard formats, and then read the reports and comments also for that player (they can give you some additional insight.)
