I currently and still have my Philips TV and the model is 19PR11 C121, and I have a DVD player not Blu-Ray and that model is DVP3140 and it's a Philips. My TV is a 19" with the big back which I believe it's a tube TV because of the back of it. It does not support HDMI. It has a headphones jack and red RCA jack for audio and yellow for video and a coaxial jack for cable. Would I be able to buy a Sony BDPS5100 player and hook that up to my TV and watch on my TV Blu-Ray and MKV?

No, that player does not have any analog outputs. No other current players do either as is required by the AACS license. You'll need an older player with composite output, or an HDMI to composite converter. For example:

Or just get a new TV. -

And also, I seen a drop down list for different converters. Which one would I need? My TV does not support S video. It supports the old RCA.

I would get the "HDMI to Composite AV + S-video Full Size". Or the "HDMI to AV Converter Metal Case (VHD-168)" if you have a USB port nearby for power, and you are sure you won't ever need s-video (slightly better image quality, but it sounds like your TV doesn't have an s-video input connector).
