Just wondering, is it at all possible to tag cover art to a video file (avi/mkv) like you can with MP3 files? So when the videos are displayed in windows folders they show the cover art, again, like MP3s do when tagged with an app like Tag/Rename etc.

avi already shows the first frame so you could simply place the coverart as the first frame

Is there any other way, to somehow integrate it into the file like MP3? So it displays on media servers, without the need for a "moviename.jpg" in the same folder.

windows doesn't recognize mkv so there's no thumbnail in explorer without custom scripting...but you could add album art in a mp4...try a search

AVI does not allow for embedded images like MP3 and MP4 do.
Do or do not. There is no "try." - Yoda
