So I'm using DVD Decrypter to back up some new DVDs I have so I can store the originals away for safe keeping (I'm serious). These DVDs are brand new video DVDs of an anime called Spice and Wolf.
But the files I've ripped from the DVD are larger than 4.7 GB (or 4.3, or whatever). Is there some kind of compression going on that I don't know about, or are DVDs bigger these days, or...?

DVD Decrypter hasn't been updated in a few years, and won't work on many newer DVD releases
Use DVD Fab, or AnyDVD
Also, it might be dual layer (DVD9), and that can hold more than DVD5 -

DVD-9, holds around 8 540 000 000 bytes and that is 7.95 GiB. DVD+R supports this format. Also called Single Sided Dual Layered. This media is called DVD-R9, DVD-R DL, DVD+R9, DVD+R DL or 8.5 GB Media.
* GiB = In the computer world is 1 KB data = 1024 bytes so 4 700 000 000 bytes / 1024 = 4 589 843KB / 1024 = 4482MB / 1024 = 4.37GB. See section 3.3 in the DVDDemystified FAQ here.

You can also have a home recordable dual layer dvd as well.
You can use dvdshrink after you ripped the dvd to shrink it to fit a single layer dvd if you don't have a dual layer burner or don't have any dual layer blanks handy.Donatello - The Shredder? Michelangelo - Maybe all that hardware is for making coleslaw? -
Huh, wow, I never knew DVD-18 existed. It was my dumb assumption that all "dual-layered" DVDs were double-sided.

Nope the dual layer is on one side. A double sided dvd is usually one single layer on one side and one single layer on the other - not always though.
I just recently bought a jackie chan collection that has a double sided disc with two movies on each side (operation condor 1 and 2 on one and dragon lord and twin dragons on the other). I haven't tested it but I am suspecting that is really a dual layered double sided disc.

It's worth mentioning that if you know whether you have a single or double layer DVD and your rip somehow is bigger than those types of discs should be able to hold, then you have a variation on what is called "bad sector" copy protection. You will need to rip such discs with something like AnyDVD (not free) or the free version of DVDFab to get the size of the rip to be sane. However, usually when this happens the sizes are not 10% larger than they should be insanely larger than they should be, such as more than double what the disc should be able to hold.
Finally, note to that the OP may be getting into the old "What is a megabyte?" question as that can cause this kind of difference. A megabyte is 1024 bytes but the use of 1000 bytes by some programs can lead to confusion. For example the capacity of a single layer DVD is 4.7 GB if you count a megabyte as being 1000 bytes and 4.37 GB if you count it as being 1024 bytes. -
I am wondering what rock the OP has been living under for the last 5+ years ?!?!
Either that or you have been only using extremely old dvd's & movies because DVD9's, single sided dual layer dvd's, over "4.7" GB, have been common & the mainstream for a loooong time!!!!
Actually I think DVD9's have been common place a lot, lot longer than 5 years!!!
