ripping Dolby Digital or DTS with a movie...is it possible?
or is stereo the only thing that can be ripped as sound?

It is possible, but depends of your destination. Vcd's only supports dolby prologic sound, not Dolby digital ! With DVD2AVI you can extract the dolby digital audio to ac3 file or downmix the sound to a wav dolby prologic file.

You can rip the ac3 soundtrack with smartripper no probs.
DTS I have not tried but is supposed to be more troublesome than ac3.
You could try vobrator for demux of DTS
