I got this set of subs in notepad form... not in .sub or .srt...so how do I change it to sub or srt? And how do I make it sync with the timing of the film? Because the film is in Italian and the subs english... Is this gonna be difficult?

If you don't have any timings to go along with the dialog then, yes, it'll be difficult.

Well the subs i have in notepad has the timing in them...so it's all about incorporating into the .srt or .sub so it goes along with the movie...

If you can post a few lines from the subs, maybe someone will recognize the the format. I think you can probably enter them in Subtitle Workshop, but I don't use it so someone else might have to explain it.
