    I like SharePod http://www.sturm.net.nz/website.php?Section=IPod+Programs&Page=SharePod

But there are also several others like:
    Ephpod
    http://www.ephpod.com/
    Flooa
    http://www.floola.com/
    YamiPod
    http://www.yamipod.com/

These are all free, there are also some pay programs.

There is a more comprehensive list on Wikipedia
    http://en.wikipedia.org/wiki/Comparison_of_iPod_managers

You might also need to look into QTFairUse or something similar for FairPlay encrypted music.

just did a little research on this and it is so easy it's ridiculous. no programs no nothing.

    1. plug up your ipod but don't have itunes or auto update on (just let you computer recognize it).
    2. click "my computer" and then click on you ipod where ever it is (ie. edrive/cdrive etc.)
    3. when you click it it just shows you folders like "calender" "contacts" etc.
    4. go to "tools" -> "folder options" -> "view" -> click the option that says "show hidden files and folders"
    5. it will show a folder that says "ipod controls" click that then click "music" and there it is. it will have tons of folders and each folder has tons of songs (if you have lots of files).
    6. just copy them back to your computer

it's that easy. the only downside is that the files aren't named the songs they are, they seem to just be 4 letters. you have to rename them again if you want to use them for something else, but now if you don't have room to keep all your songs backed up on your computer and something happens this is all you have to do.

edit: just did a quick test and it does save the song how you have it in itunes. when you pull it off the ipod it is just a file with 4 letter like i said (for example "FLOE"), but when you put it back it itunes it remember all the information.

Yes, you can do that. But the above programs are a better choice, since they can query the iTunes/iPod database and put all the song information (name, tags, album art, etc.) back into the songs copied from the iPod without any renaming, and without going through many gigabytes of songs just trying to find those one or two songs you want.
