Convert what to what? For most X to Y, there are guides to be found under Convert left, like AVI to DVD: https://www.videohelp.com/guides?searchtext=&tools=&madeby=&formatconversionselect=AVI+...or+List+Guides
When converting from one format to another, never expect any quality gain, only loss.
5 pass encodes is basically just a waste of time. IMO, 3, possibly 4 (even if I doubt the latter) makes any real difference.

The quality will NEVER be better than the original. No way, no how. If it looks the same, you have done the best you can.
There are detailed Guides for every conversion you could want to do. -
When you convert one format to another, the quality will at best theoretically be identical. In practice, you always end up with a slightly (or significantly) reduced quality.
I provided just a sample link for AVI to DVD. If you click on Convert left (https://www.videohelp.com/convert), there's a dropdown menu where you can select from and to formats (Right beside the text "Format Conversion:").

AVI to DVD: FAVC, Convertx2dvd - Or if you want to do it yourself for each step: AviSynth + HCEnc + ffmpeggui + DVDAuthorGUI
DVD to AVI: Avi.NET, AutoGK - Or if you want to do it yourself: vob2mpg + VirualDubMpeg2 + XviD codec (+ DVDFab Decrypter to rip the DVD to disk to start with).
