I have a video that is an AVI file. When I play the video, it is in Spanish, I think.
There are three other files which I think are different language files.
MOVIE.AVI
MOVIE.ENG.SRT
MOVIE.ESP.SRT
MOVIE.ITA.SRT
How do I change the AVI to English and then save it in English?

They are subtitle files. You can't change language in the audio track with these.
What will you be playing it back with ? VLC and Media Player Classic should see the subtitles. If not, change the name of MOVIE.ENG.SRT to MOVIE.SRT and they will. Likewise, change the name and it will play in most standalone Divx capable players.
