Hey all,
I know I should probably start with something simpler, but I've got an AVI file which includes subtitles (okay, GSpot says it's a DivX inside) and I'd like to turn this into a DVD.
Are there any tools (hopefully free) that I can use on the AVI to re-extract the subtitles? Or is it possible to simply create the DVD from the AVI with the subtitles, burned in or not? What are my options?

ConvertXToDVD would be my first choice. It handles subtitles and does well with PAL<>NTSC conversions also. It's not free, but it's worth the cost, IMO. With a DVD, you can have selectable subtitles.
For freeware, FAVC or DVD Flick are popular, but I'm not familiar with their subtitle handling.
I would also highly recommend the freeware ImgBurn for burning DVDs.

EDIT: After re-reading your post, are you asking about hard subs? In other words subs that are burned into the video? Those you usually just pass through the encoding to MPEG and leave as is. They are all but impossible to remove anyway. Most subbed Xvids or Divx files have the sub as a separate file, often .srt format. It would be in the same folder as the video and generally have the same name. Those can be used in a DVD to create selectable subs. -
What I mean is, I don't really care if the resulting DVD has hard subs or selectable ones.
