I have a DVD with three movies on it.
I only want my backup to have one movie, but retain all the menus that it comes with.

DVD_Shrink's reauthor doesn't let you keep the menus when you reauthor the disk.

What tool(s) should I use, and is there an article for this? I've looked.

Vobblanker can be used to remove the other movies. You can then edit the menu so you can't select those movies or options relating to them using a program called MenuEdit.

Or just using DVD Shrink you could replace the unwanted movies with still frames without having to re-author.
