I looked both of these functions up on various sites and all explanations are very technical (too technical for me). I'm wondering if (A) someone can explain what they do in terms of the Options tab when encoding DVDs with the mpeg2enc option and (B) let me know if both should be checked when encoding high resolution avi files to DVD. Thanks.

The Altivec option provides a speed bump on G4/G5 Macs, by utilizing a special part of the processor in those Macs. Always enable it if you encode on a G4 or G5, unless you like waiting longer for no reason.
Bicubic is a scaling method (re-sizing the picture). For DVD mpeg2enc it provides better scaling (nicer result) than not enabling it.
