I use Basic CCE SP.. If I convert an AVI file to DVD using CCE.. What do I do to the subtitles? Does CCE support subs at all?
and I am talking about SRT format - not SUB format

CCE is just an encoder. CCE basic doesn't resize to compliant resolution. Use FitCD and avisynth to frameserve your avi at the correct resolution to CCE basic. CCE basic will encode the video to a compliant mpeg video stream. It can do audio, but only to mpeg1-layer2. Better off using ffmpeggui to create a AC3 audio track.
You then need to author the disc using something that handles your subs. DVD Lab Pro can do srt subtitles.Read my blog here.

OK - Say, I get the menus and subtitle files and chapter files of a DVD, say like in the DVD structure (eg: VIDEO_TS.IFO, VIDEO_TS.IFO, VTS_01_0.IFO, VTS_01_0.IFO, VTS_02_0.IFO.. )Can i use them? and convert my AVI to make my own DVD with the stuff??

Not easily, no. You can look at tools like Vobblanker that might allow you to replace the content, but I wouldn't guarantee the outcome.
