I've used the guide by theMatrix, to put new subs on dvd. I always rip the subs with subrip to get the *.srt file. Then adjust new subs to this and use dvdlab to remux. Works just fine this way.
Results are always a good quality movie with right subs.
The tricky part, to insert the result in original movie, thus being able to preserv the menus and extras, however always fail.
Tried several guides using other tools fx. vobblanker to insert or replace the mediastream, but never got a playable dvd. Does ne1 have a guide that actually works for this?

From a guide I follow (more-or-less
) here at videohelp...
Use Pgcdemux to strip audio, subs, video, celltimes. [or get your sup files however...]
Use Chapter-Xtractor to get a list of cell times used for chapters. Open celltimes.txt & delete frame numbers that don't match, and save file.
Use muxman to create non-menued DVD layout with desired subs and audio, using demuxed vid.
Open original in VobBlanker. Skip processing on everything but title you want to change, select it in top window, select in bottom window, click replace, select muxman created title for replacement.
Copy colors from original subs (Ifoedit etc...).
