In VirtualDub, you can create the stark B-W contrast either with Levels (see sample) to retain some shades of gray or with Threshold (see sample) to make it pure black and white.

Regarding levels, I forgot to mention that the settings for reaching the desired effect varies from scene to scene. As a general principle, you'll have to pull them towards the middle a whole lot more than you'd do in a regular levels correction.

The threshold will also need to be adjusted according to the darkness of the scene to produce sensible results. It's basically a trial and error task you're faced with.
