i would like to put the episodes of trailer park boys onto a dvd, and also create menus with a background picture and an audio track, what would be the best way to do this

You gotta convert to DVD-compliant MPEG-1 or MPEG-2 files - See What is DVD? (top left) for the specifications. http://members.dodo.net.au/~jimmalenko/AVI2DVD.htm , or any of the other guides in the guides section under the "AVI to DVD" conversion type might help you with this.
https://www.videohelp.com/forum/viewtopic.php?t=268410 and/or https://www.videohelp.com/forum/viewtopic.php?t=267729 can help you with putting a background picture and audio together in TMPGEnc DVD Author.If in doubt, Google it.
