i have a question about the audio quality. some dvd's i have backed up come out true dolby digital 5.1 surround and others are dolby digital 2.1. how can i choose to burn them all to 5.1???

You can only "choose" to have 5.1 if it is on the original DVD to start with. You cannot "create" it. Some DVD manufacturers do not put 5.1 onto their DVDs. Unless you want to demux, re-encode the audio, remux and author, there is no way to do it.
If in doubt, Google it.
