Subpicture is usally the subtitles in the main movie sectiion. I elimnate all except the english. Many times in movies you can not make out what the actors are saying clearly so having the sub's helps to understand what they just mumbled. Various audio tracks in the subpicture is normally the xtra's like director/cast commentaries etc.

    AC3 is dolby digital

5.1 is left, right, front, rear left, rear right speakers and the.1 is the subwoofer (typical surround mode setup). Mostly setup to use the digital input of ur reciever/audio device.

2.1 is left and right speaker and subwoofer (basic stereo but with a subwoofer). Usally nice to have if you not set up for surround sound and it is the same source as the analog singals except u get the subwoofer but its digtal if it is AC3.
