Check out https://www.videohelp.com/tools?tool=479#comments for DV Time Stamp. It will let you pull the date/time from the captured avi file and put it onto the video to be displayed on screen.
You can also check out http://www.divx-digest.com/software/dvsubmaker.html for dvsubmaker which will extract the date and time to allow you to create subtitles from them. I'm working on this method myself right now and haven't quite gotten it to work. I've been using the guide with Vobedit and ifoedit, but for some reason only the first date is being displayed, and then only for a short time (a minute maybe). -
I just found out about alidator Vdub filter. It stamps the date time on Virtual Dub captured video. That's right, not DV AVI, but Huffuv, DivX, XviD, the whole nine yards.
