Will the 5.1 sound track on a movie always play in 2ch. stereo on a non-surround setup?

Yes - all DVD players have to support some degree of downmixing.
The same is NOT true with DTS, however - so don't get caught out. -
But DTS sounds much much better thant Dolby. When I backup a movie, DTS is the first thing that I look for.

Actaully, I really don't have a preference on which sound format I like to include on my rips. By preference, I mean btw. Dolby Digital and DTS. I've watched movies in both formats, and most of the time I really can't tell the difference, and this was on a Bose Lifestyle II system. I tend to go with the Dolby Digital mix most of the time because it's simpler, and also it's only takes up like 1/3 to 1/2 the size that the DTS track does most of the time. Like with Gladiator, the damn DTS track was around 890MB I think, that's almost 1/4 of the DVD-R recording space! DTS included, I think not!
