Ok, I understand that CPU usage does not affect conversions, but what about playing a video/audio file while converting another? (Especially if they happen to be using the same codec)?

Would not affect conversion quality - but if your CPU cannot take the load, playback will be jerky and unviewable while conversion would slow down.
The more I learn, the more I come to realize how little it is I know.
