I have demuxed and reencoded an anime that I am working on. The reencoded video only took about 3 gigs. Obviously there is still a lot of room left for the DVDR.
Should I reencode the video with a higher avg bit rate to get it closer to 4.7? Or ignore the free space since adding the sound during the remuxing stage fill up the space? If I were to reencode the video, what should my target size be if I have 2 audio tracks (178 megs and 165 megs)?

Only if by re-encode you mean you are going to re-encode the original AVI you captured with and not try and re-encode the VOB or MPG, then yes.
