I already have a VIDEO_TS folder that fits on a DVDr, but it plays subtitles by default. Is there any way to edit an IFO file or something to get rid of this? Maybe with IFOEdit? Or do I have to run DVD Shrink or something to get rid of the subtitles.

what's the movie? You say it's on a DVDR so is it a DVD-5 you ripped and burned? some how..if it was a DVD9 what was your ORIGINAL backup method? And when you say the subs come on during playback...are you able to hit a button and immediately turn them off? If so, you are just asking how to get them to not IMMEDIATELY be shown from initial playback?
You can use IFOedit to either eliminate the subs or have them from being forced during playback....but let me know the answer to the above questions.
