I assume you mean Analogue Capture...

I suggest using an MMJPEG (PicVideo if you have a CPU < 2GHz, otherwise Morgan Multimedia) codec and iuVCR as capture program (if VirtualDub doesn't work).

I have used this setup to convert some of my VHS tapes to DVD and the DVD quality is quite good.

    Far too subjective a question.
It depends significantly on your hardware, your requirments, your expectations and your final output plan.
I would never expect to achieve the same results for mpeg as I do when capturing avi using PicVideo quality 19/20.
Are you intending to output to dvd?
    What is your source?

  4. I was high on capturing to MPEG2 but after working with AVI for a while, I have seen the light.

If at all possible, capture to AVI.
Don't give in to DVD2ONE, that leads to the dark side.

when I want speed over quality, I capture in mpeg-2.

when I want quality over speed, I capture in avi, either in Huffy or MJPEG.
