Hi people keep talking about how great the quality of their converted movies with instant copy are, but no-one actually talks about HOW it converts them. I mean, apart from taking out extras and the obvious stuff, does it re-encode the audio? drop the frame rate by 5? wat?

The great thing about Instant Copy is that you don't have to lose the extra's if you don't want to but the more stuff you drop (Subs, audio streams) then better your main video quality can be when its reencoded.
It basically drops the bit rate (frame rate stays the same). -
No the audio part is not COMPRESSED
but you can remove AUDIO ASSETS from the disc by UNCHECKING THEM
This never frees up much space
(just make sure to leave some version of the sound to listen too!)
For example the nEW LED ZEP disc has three versions of the sound on it of which you copuld chuck one or two
There is PCM 2Channel ans DTS 5.1 andDD 5.1
all on one disc
And the instant Copy version sounds identical:-)
