I am/was planning to use a S-Video connection for my captureing but I just noticed that neither my VCR, Tuner, or Digital Cable reciever has S-video outputs!! My TV does however, despite being older than all three of the previous machines. So given that, can I just plug the S-Video into the TV and still do all my captureing, or is this setup a wash?

No, I don't think that will work. You need to connect you're vcr/sat/etc to your capture device. You may be able to find a S-video to rca. Here's just a sample.... http://www.lastar.net/product_list.asp?cat%5Fid=7401
