I've been capturing video from my VHS for a couple months now using Virtual Dub, ATI Radeon 8500dv, and the PIC Video MJEPG codec set at 18 quality and 640 x 480. I then convert the capture to MPEG2 using TMPGEnc using these settings:
352x480, constant quality 65%, max bitrate 2520, soften block noise. Sometimes I use noise reduction filters during capturing.
Encoding like this I can usually fit 5 1/2 - 6 hours of video on a single DVD. So far I've been pretty happy with the results. I was wondering, is there anyway to improve the quality while maintaining to fit about 5 1/2 hours of video on the DVD?
Or post what programs and setting you use that you feel is best.

I think 4 hours is about the most you can get and still have good quality but with TMPGEnc try 352x480 MPEG2 23.976fps with 3:2 pulldown 192kbps audio and use 2 pass vbr (1650 average will give you 5.5 hours, 1500 for 6hours and use 3000-4000 max, min can be as low as 0) with high or highest motion search precision.
Of course, depending on your source, you may not be able to use 23.976fps with satisfactory results. Then you'll have to stick with 29.97fps.
