    Easiest way it to use stream processing in your dvd ripper and only rip the audio track you want. Set the ripper to demux (demultiplex) and it will export the audio as an AC3 file. Then you can use BeSweet to convert directly from AC3 to mp3.

    Actually I found this link http://www.area450.com/create/dvdtoaudiocd.htm on ripping your DVD soundtrack. I did this with Tommy (because I have the DVD and didn't feel like going out and buying the CD...frankly the CD stinks anyway) and the results turned out rather well. Once you get the wav you can edit it and pretty much do with it as you please.
