I have heard it's about 15GB per hour of digital video but once it's converted to MPEG-2 how much space does it take up per hour??

The thing is I would like to make quite a few DVDR copies of my footage once it's encoded and leave it on my hard drive as the only other way to duplicate DVDR disks seems to be quite expensive machines.

Any drop of knowledge would be helpful.

At quess around 1.5 hour to 2 hours of GOOD quality MPEG2 would take up around 4GB.

This would vary according to bitrates. It could be higher or it could be less.
