I plan on buying a camcorder to mainly edit my surgical operation videos. Do you think that the camera resolution or format (Digital 8 or Mini DV) have an effect on the finial movie if it is recorded using the VCR option and not through the lens??

No - even the cheapest Digital 8 cams offer full DV res. The drawbacks in the cheaper cams is in the optics.
