Just thought to start looking into it and wondered:
Is there is any way at all to use a cd-rw to create dvd's that will play in a stand alone basic "pretty-sure-it-won't-play-anything-but-a-standard-dvd" player or must you have the dvd-r?

If you have a player that will play mini-DVDs (CD-R/RW with a DVD file format) than yes. If not then no. The only reliable way is to try it out.
If not, stick with MPEG-2, crank up the bitrate, screen resolution and setup some menu programs -- and you have bascially the same thing.
